Farm Fresh Quail Eggs
These little eggs are packed with vitamins and minerals. Quail eggs provide significant all around health benefits while supplementing your calcium. They are made up of approximately 13% protein. The interesting thing about these eggs is that there is no risk of salmonella because the quail's body temperature it is much higher than that of a chicken. In addition, they cannot become contaminated and infected because they contain a substance called lysozyme. Lysozyme kills bacteria. **NOTE** Quail eggs contain significant amounts of Vitamin A and B2. It is recommended that you do not consume excess vitamin A if you consume more than 5 quail eggs each day... talk to your doctor. |

Farm Fresh Duck Eggs
Here at Honeysuckle Hill we raise Khaki Campbell, Welsh Harlequin, Pekin & Muscovy. The yolks vary in golden orange color. Raw duck yolks are thick, rich, and custard like. Many pastry chefs believe because of that duck eggs are superior when making cream and custard fillings. They are also higher in albumen (protein), this means that your baked goods will have a richer texture, stay moist longer, and rise higher. The duck eggs have a grayish shell that is firm and thick. It can be a bit more challenging to crack than a chicken egg. When baking gluten free use duck eggs! The added protein in the whites will help bind the gluten free ingredients better and cause the texture to be lighter, fluffier, and more like wheat based cakes and other baked goods. |
